Okay, hear me out before you may possibly skim over this post. Ha! First of all, this is not your grandmother's meatloaf by any means. With that being said, if you are in the mood for a healthier version with a similar texture, then I would give this a shot. The meat-loving men in my house really enjoyed it, too!
Spicy Vegetarian [Bean]Loaf, makes one 9" x 5" loaf or 8 slices
1 15 oz. can kidney beans, drained 1 15 oz. can black beans, drained 1 4 oz. can fire roasted green chiles 1 c. corn 1/2 c. red onion, diced 1/3 c. cheddar cheese, shredded 1 c. panko bread crumbs 1 tbs. olive oil Pepper, sea salt, cumin, cayenne + red crushed peppers to taste 1/4 c. BBQ sauce (optional)

Sauté red onion until soft, then add beans, corn and spices. You will notice that any liquid will evaporate, and beans will become even softer.
Add mixture to the remaining ingredients, and place in 9" x 5" loaf pan. Top with BBQ sauce, and place in oven at 350° for 30 minutes. Once done, let cool for 5 minutes before serving.
We ended up pairing ours with a nice big green salad. I did however tell my family that this was a complete experiment (as I have never made it before), and if all else failed they could grab some chips and eat it as dip. :) But...they loved it, and so did I!
