Confession: I'm in love. Completely, 110%, head over heels, I'd totally run off and elope...with avocados. What, did you think I was going to say Greg? Pshh. Just kidding, babe!
But seriously, I love avocados. They have to be my favorite food ever. So versatile, delicious and really great for you! You can eat them with any meal, too! On top of toast or an omelette for breakfast, in a sandwich for lunch, on top of a salad for dinner, or even mixed with cacao powder for dessert. So yummy!
Today, we're going to talk about DIP! Who doesn't love dip? This avocado dip is packed with flavor, and can be used with veggies, crackers or even chips! Yum!
Avocado Dip, makes 2 cups
2 avocados 1/2 c. Greek yogurt 1 lemon, juiced 1 tsp. minced garlic 1 pinch each salt & pepper, to taste
Place all ingredients in a blender or food processor and puree until smooth. You could hand mix if you want a chunkier dip. That's all! Simple and so good! I chopped up some veggies to eat with mine, but I may have some with a few chips at dinner time, too.
I love that the flavor of garlic and lemon are tasted, but don't overpower the avocado. The Greek yogurt definitely adds to the creaminess too! Think you'll try this? Let me know if you do!
