Hopefully it is one of the first two, but if not, then I have a feeling I can convert you. Muahahaha! <--- Getting in the Halloweeen spirit! Ha!
Anyway, the other day I was thinking of how much I enjoy egg salad and tuna salad sandwiches, and thought "what other types of salad sandwiches can I make?" It was then that I rummaged through my kitchen and found several cans of chickpeas (AKA garbanzo beans). Yes, that was it! There are many ways you could make this recipe, but I chose to go with curry because I love the flavor.
Side note: someone in my house isn't a big fan of chickpeas, but ended up really enjoying this as a sandwich. Yay!
Curried Chickpea Salad Sandwich, serves 4 to 5 sandwiches
3 15 oz. cans chickpeas, drained 1/2 c. celery, diced 1/4 c. grapeseed oil (can substitute for olive oil) 1 1/2 tsp. curry 1/2 tsp. salt 1/4 tsp. pepper
Begin my mashing the chickpeas. You don't want it to be completely smooth, but more of a consistency of egg salad.
Once mashed, mix in the remaining ingredients. You can eat this on its own, or spread it on bread (I used sprouted wheat) with some lettuce and tomato.
I love how easy this was to make, and how much flavor is packed into this sandwich. Yum! A great added bonus is that it works with many ways of eating (vegan, vegetarian, gluten-free, allergy-friendly, etc.). Enjoy!
