Happy Halloween!  I'm definitely one of those people that gets in the spirit of Halloween.  Any excuse to eat fun goodies and dress up, is a good day to me!  If you saw my Instagram post yesterday, you may have noticed that I was in the kitchen whipping up something special for today.

My all time favorite candy as a child were Reese's Peanut Butter Cups.  OMG, I could eat so many of those!  Ha!  To this day, peanut butter cups are still my fave, but not that specific brand.  I chose to make a "Jen friendly" version, and holy moly, they are wayyyyy better than the original.  This is the third time I've made them, and they are perfected.  What a perfect, simple treat to bring to a Halloween party, or anytime you want a sweet treat!

This is seriously the most simple recipe...Use the double broiler method (glass bowl over boiling water) and place chocolate chips and coconut oil inside, and stir until smooth.

In a muffin tin with liners, place a small amount of chocolate (just enough to cover the bottom), and put in freezer for 3 minute to harden.  Take out and spoon a small amount of almond butter in the middle.

Cover with more chocolate, and place back in the freezer for 15 minutes.

The final step is by FAR the most difficult!  Take out of the freezer, take a bite, and try not to eat the entire pan!  Ha!  Enjoy!!

In honor of Halloween, I thought it would be fun to take a stroll down memory lane, and revisit a few costumes from years past...

This may have actually been for an 80's party, but you get the point.

Apparently I liked the idea of being a cowgirl at a young age.  I was about 7 here.  Awww...

Have a happy, fun, and safe Halloween!

P.S.  I dressed up, and my costume will be up soon!  Hint:  Peace and love, baby!!
