WEEKEND RECAP #4 & FRUIT + VEGGIE QUINOA SALAD

Hi friends!  Hope you all had a great Halloween weekend.  Mine was mellow and fun all rolled into one.  On Friday I dressed up as a flower child/hippie.  The best part about my costume was that it only took me about five minutes to throw together, and everything came from my closet!  Yeah, baby! Today I am sharing a super simple quinoa recipe that can be made in about 20 minutes (that includes the time it takes to cook the quinoa).  Quinoa is an excellent source of protein and fiber, goes really well with almost everything, and is naturally gluten-free.

Fruit + Veggie Quinoa Salad, serves 6

1 1/2 c. quinoa (I used red), cooked 1 large apple, diced 2 celery stalks, chopped 1/2 c. red onion, diced 3/4 c. tomatoes, chopped 1 lemon, juiced, not pictured Salt + pepper, to taste

 Ready for the really difficult directions?  Mix all ingredients and eat!  How easy is that?  This is a great salad served by itself, on top of lettuce, or as a yummy side dish.  Also, ingredients can be customized to your taste.
