Good morning! Last week I introduced a new feature called Simple Snacks. The idea came about when I recognized how much I love eating healthy snacks, and how others may benefit from some new ideas. All of these ideas will not only be simple to make, but will include simple ingredients, too. Last week I shared about Spicy Avocado Rice Cakes, and today I am sharing another rice cake snack (I love rice cakes, if you haven't noticed. Ha!). This is a snack can also be eaten as a dessert, as it is on the sweeter side. Yum!
Almond Butter Rice Cake, serves 1
1 brown rice cake (TJ’s is my fave) 1 tbsp. almond butter Sprinkle of toasted coconut Sprinkle of semi-sweet chocolate chips
Simply spread the almond butter on the rice cake, and sprinkle with coconut and chocolate chips. Such a great sweet treat idea, that is also high in protein! Also, feel free to customize this to your liking. Want peanut butter instead? Go for it! Not a fan of coconut? Skip it, and maybe try some chia seeds instead! Like carob chips better? Use 'em!
