BAKED SWEET POTATO FRIES

Good morning!  The past few days have been busy, but I'm glad to share a simple recipe for baked sweet potato fries today.  I love sweet potatoes!  Sweet potatoes are a great alternative to other types of potatoes, as they have less starch and are super high in vitamin A, B-6 and C.  Always a perk!

Baked Sweet Potato Fries, serves

2 sweet potatoes 2 tbsp. corn starch 1 tsp. olive oil, not pictured Salt + pepper to taste, not pictured

Peel and halve sweet potatoes.

Slice in quarters, then soak in water for about an hour to release starch.  Once done soaking, dry on a few paper towels to remove excess water.

Next, place potatoes, corn starch and seasoning in a gallon sized bag and shake, shake, shake!  Place sweet potatoes on an oiled baking sheet, and bake for 25-30 minutes at 375°, or until crispy.

I served mine along side a yummy portobello mushroom burger, and they were delicious!  Let me know if you try them!
