Happy Friday! Is everyone excited for the weekend? We have two holiday parties, and I'm getting excited about them. Any excuse to get a little dressed up is a fun occasion to me! I have another addition to my Simple Snacks feature, that is sweet, salty and full of texture. I find that (for me) texture is usually the ultimate deciding factor when it comes to my food. If I am in the mood for something crunchy, there is no way I will have something creamy, even if it means having to wait. Anyone else feel the same way? It may be strange, but I've learned to listen to my gut (no pun intended, hehe). I call these cookies because they taste similar to a cookie to me, minus the dough. It's a nice switch. On to my Apple "Cookies!"
1 apple, sliced (I used a Pink Lady) 1 tbsp. peanut butter or nut butter of your choice Sprinkle of chia seeds Sprinkle of semi-sweet chocolate chips
Simply spread peanut butter on apple slices, then sprinkle on chia seeds and chocolate chips. I chose to pop mine in the refrigerator for about 30 minutes so they were chilled when I ate them. Totally not necessary, but it was a nice change. :)
This was such a great snack, but could also be a dessert. Yummy, crunchy and full of omegas! Enjoy!
