ZUCCHINI PASTA

Good morning, loves!  How is everyone doing today?  I woke up bright and early this morning, got so much done, and am having a great day (it's only 6:02AM).  Don't you love it when you wake up like that?  I do! As you may have already caught on, I have a not-so-secret love affair going on with zucchini (shh! Don't tell Greg, he hasn't caught on yet).  I've made quite a few recipes with zucchini as one of the main ingredients, such as these crunchy Spicy Zucchini Pickles, or the best Zucchini Patty EVER, and a huge fan favorite, my Quinoa Enchilada Bake.  If you search "zucchini" on the blog, you'll find about 12 other recipes, too!  Ha!

Anyway, why stop now with my love for zucchini, right?  My SIL gave me a Veggetti (a veggie spiralizer), and I absolutely LOVE it!  I've been using it to make pasta out of zucchini and squash, and it's so good!  Plus, it doesn't feel like you ate a brick's worth of pasta, and you get lots of nutrient dense veggies.  Check out my favorite recipe so far!  P.S.  You do NOT need a spiralizer to make this recipe!

Zucchini Pasta with Sun Dried Tomatoes & Egg, serves 2 to 3 people

3 medium sized zucchini 1 lemon 2 eggs 1/3 c. sun dried tomatoes, diced 1/3 c. peas, not pictured Drizzle of extra virgin olive oil (the good stuff!) Salt + pepper, to taste

Begin by boiling about 3 c. of water, and while water comes to a boil, spiralize your zucchini.  If you do not have a spiralizer, simply shave strips by using a vegetable peeler (avoid the seedy area in the middle).

While water is boiling, cook two eggs over medium.  Trust me!  It may sound odd having an egg on your pasta, but it is sooooo delicious!

When eggs are almost finished, toss the zucchini in the water for about 1-2 minutes.  You do not want to fully cook it, but simply get it nice and hot.  Once done, drain and toss with all ingredients (minus the egg), and finish by placing the egg on top.

Doesn't that look amazing? It looks like there is more than a drizzle of oil, but it's just lemon juice.  So delicious, full of flavor, and lots of texture.  Yum!
