WEEKEND RECAP #17 + A DATE SMOOTHIE RECIPE

Good morning!  How was your weekend?  Mine was mellow, and I also got the chance to spend a little extra time in the kitchen, which is always fun for me. photo 1Friday evening I wanted to make something warm for dinner, and decided to try something new: tortilla soup!  I've never made it before, and pretty much just made up my own vegetarian version, which turned out super yummy (recipe will be on here tomorrow).

photo 2After dinner I made a celebratory dessert (celebrating the return of House of Cards) of gluten-free brownies (TJ's) with a little Greek yogurt inside, topped with raspberries.  So good!  Then we proceeded to watch HOC.  Have you ever seen it?  Are you a fan?

photo 3Our weekends have been so busy lately, that having this super mellow weekend was very much appreciated.  We had Mexican omelettes for brekkie, which included left over tortilla soup toppings.  This the best!  Also, can you believe that is only one egg in the omelette?  I really got it fluffy!  The rest of the day we ran some errands, strolled through Barnes and Noble (in my top 10 favorite things to do), and did a few things around the house.  Love Saturdays!

photo 5I don't really remember when I made this, but sometime over the weekend neither of us were hungry for a meal, and just wanted something to tide us over.  I made date smoothies and topped them with hemp seeds.  Delicious, filling, and a great alternative for when you want something sweet without all the sugar.

Date Smoothie, serves 1

5 dates, pitted 2/3 c. almond milk (or milk of choice) 1 tsp. cinnamon 6 ice cubes 1 tsp. hemp seeds (you could also use chia or flax)

Blend all ingredients except hemp seeds together, then pour into a glass and top with seeds.  I like topping it with the seeds because you get an extra crunchy texture.  Enjoy!
