FISH TACOS

   

photo 3Good morning!  As you have probably noticed, the majority of my meals are vegetarian, some even vegan (out of choice, habit, preference--whole other blog post).   However, on occasion I eat fish, and the other day decided to make tacos with some.  They were really fresh, light (yet filling), and super spicy.  Just how I like them!  Check out the recipe below.

photo 1Fish Tacos, makes 4 tacos

12 oz. fish of choice, I used TJ's Soy Ginger Wild Cod <--- SO GOOD! 4 corn tortillas

Slaw

1 1/2 c. cabbage, chopped 1/4 c. sour cream or Greek yogurt 1/4 c. tomatoes, diced 1/3 c. jalapeños, diced <--- I like extra spice, so use to your liking.

Toppings, optional

Avocado, chopped Cheese Cilantro Tapatio, or hot sauce of choice

photo 4Begin by cooking fish.  I grilled mine in a pan, but it can also be baked, sauteed, or even BBQ'd with the right fish.  While fish is cooking, prep slaw (mix all slaw ingredients together), and chop up toppings.  Right before fish is done, warm up the tortillas and place slaw on tortilla first, then fish, followed by the toppings.  Then...ENJOY!  :)

photo 5Like my goofy photo with a taco?  Ha!  Also, for some reason I thought this meal would take me a lot longer to make, but I checked the time, and it took 12 minutes total.  12 minutes, for a yummy homemade meal?  Yeah, baby!
