Hello, there! Hope you all are having a lovely day so far! Yesterday, I mentioned that I would be sharing the recipe for my Spinach + Feta [Crust-less] Quiche. You may be thinking what Greg and my brother said, which was, "the crust is the best part!" Ha! Well, while I agree that the crust can be quite tasty, often times it upsets my tummy. Knowing my Mom was also making a few quiche's (with the crust) for Easter, I decided to forgo the crust, and basically make a fancy egg dish. Not only is this superrr easy to make, but there are literally three ingredients (plus seasoning)! I love that! Check out the recipe below! Spinach + Feta [Crust-less] Quiche, serves 15 pieces
12 eggs, beaten 1 8oz. block of feta cheese (TJ's), cubed 1 12 oz. bag frozen spinach (TJ's) Salt + pepper, to taste
Begin by sauteing frozen spinach, then remove from heat and let cool a bit (so it doesn't scramble the eggs).
Add feta, spinach, and seasoning to eggs. I suggest only a sprinkle of salt, as the feta is naturally salty. Stir, and place in a lightly greased (I used about a teaspoon of olive oil) pan*. Cook at 350° for about 40-45 minutes, or until eggs are set. Enjoy!
*I used a 9" x 13" pan, but you could used to 8" pie shells, too!
