Good morning! How are YOU doing today? I can currently hear lots of birds chirping out the window, and it makes me really happy that Spring is here. What is bringing you happiness today? Yesterday I shared that I meal-prepped on Sunday, and made a large container of GF pasta salad to have throughout the week. Today, I am sharing the recipe! This Greek [Gluten-free] Pasta Salad is very similar to this Mediterranean Pasta Salad I made a while back, but with a few small changes. I really love all the fresh, crisp ingredients in this recipe. Plus, with the gluten-free pasta, it really keeps it light. Check it out!
12 oz. package of GF pasta (I used TJ's brown rice pasta, it's my fave!) 1/3 c. red onion, sliced thin and chopped 2/3 c. tomatoes, diced 1/2 c. Kalamata olives, pitted 1/2 c. feta cheese, cubed 2/3 c. cucumber, chopped Drizzle of olive oil Salt & pepper, to taste
Begin by cooking your pasta as directed. As pasta is cooking, prepare other ingredients. Once pasta is cooked, drain, and gently rinse with cold water (I know, this is not what you are "supposed" to do, but trust me, do it anyway), and place in a large bowl. Gently mix in other ingredients, toss, and serve!
SO simple, right? I portioned out a few in small containers for Greg to take in his lunch during the week, and he is loving it. I added a few spoonfuls to the top of my green salad, and it was yummy that way as well. Also, we're eating it cold, but feel free to eat it warm, too! Enjoy! :)
