Happy Friday, friends! How is this day treating you? Any fun plans this weekend? We have a jam-packed, fun-filled weekend planned. I'm so excited! I'll definitely recap on Monday. :) Today I am sharing the most simple, light (yet filling), fresh, and tasty GF Caprese Pasta Salad. Fresh mozzarella + basil from my garden + juicy tomatoes?! Sign me up!
GF Caprese Pasta Salad, serves a lot <----Ha! Maybe 14 servings, if I had to guess?
16 oz. GF brown rice fusilli pasta from TJ's (you can use non-GF pasta, but this is my all time fave) 3/4 of an 8 oz. container of fresh Ciliegine mozzarella, halved (you can use more or less depending on preference) 1 1/2 c. cherry tomatoes, halved Large handful of fresh basil, chopped 2 tbsp. EVOO Salt + pepper, to taste
Simply boil your pasta as directed. While pasta is cooking, prep other items. Once pasta is cooked, drain, and place back into pot. Add remaining ingredients, toss, and THAT'S IT! Love the simplicity!
This yielded a lot, so I placed it in a large Tupperware container, and we have been enjoying it for several days. Cook once, eat twice, thrice, more like seven times! Good thing I love it! It's great warm, but I really enjoy it cold, too. :) Think you'll make it? Let me know if you do!
