Hi beauties! Today I have a super delish recipe for Tempeh Tacos! Before I get into the recipe, let's talk tempeh. WHAT IS TEMPEH?
Tempeh is a fermented soy product that is firm, and almost the same texture and consistency as a veggie/burger patty. Often times you may see dark spots on it, which unless it is reallyyyyy old, is okay. This happens during the fermenting process.
HOW DO I COOK TEMPEH?
I feel like many people are intimidated by tempeh--I certainly was before I started cooking with it! For myself, I find that tempeh is best marinated or baked crisp. Anything else, and it doesn't taste as great (to me).
WHERE CAN I BUY TEMPEH?
I purchase my tempeh at Trader Joe's (are you surprised? HA!). It is organic, and non-GMO, which is how I like my soy products. I know you can purchase it at Whole Foods, most natural foods stores, and maybe at supermarkets.
On to my taco recipe!
Tempeh Tacos, makes 8 tacos
8 oz. tempeh 1 small yellow onion, diced 2/3 c. corn Seasoning, to taste (I used 2/3 pkg. of TJ's taco seasoning mix) Tortillas or taco shells
Tomatoes Lettuce Cheese Avocado Onion Greek yogurt or sour cream Salsa Hot sauce
Begin by sauteing tempeh, onion, corn, seasoning, and 3/4 c. water (the water helps to moisten the tempeh) for about 10-12 minutes. While taco mixture is cooking, prepare the toppings and taco shells (I got mine at TJ's). Scoop mixture into shells, top with toppings, and enjoy! Easy peasy!
Don't those look amazing?! So simple, healthy, filling, and flavorful. We had extras, so we ate it on salad the next day. Yum!
If you omit dairy products in the toppings, this meal is completely vegan and gluten-free. A great allergen-friendly meal! Also, I don't eat meat, but Greg said it had a very similar taste and texture to ground beef. :)
